Bacon Cheese Hotdog Appetizers

"Are You Ready For Some Football?" Here’s a great treat for get-togethers and tailgating at sporting events that all will enjoy.

Ingredients:

1 lb Grass-Fed Hot Dogs (thick dogs) cut into quarters, then sliced down the middle
2 lbs Grass-Fed Bacon (lengths cut in half)
8 slices Grass-Fed LVC Pepper Jack cheese or Jalapeno Cheddar cheese
½ cup sugar free Greek Yogurt
¼ cup Yellow Mustard
¼ cup sugar free Ketchup
1 jalapeno (ribbed, seeded, chopped fine)
4 Tbsp. honey
2 Tbsp. T-Coons Seasoning
salt and pepper to taste

Instructions

Bacon cheese hot dog bites:
1. Cut hot dogs into quarters, then slice each quarter down the center.
2. Slice the cheese into rectangles that will fit in the center slice of each hot dog.
3. Place one to two rectangles of cheese inside the hot dog slices (two slices is cheesier).
4. Wrap each dog with a half-piece of bacon.
5. Hold the bacon, hot dog slices, and cheese in place with a toothpick.
6. Grill or oven fry for 10 minutes, flipping a few times until bacon is crispy.
—the cheese will melt too much if you bake wraps in the oven.

Dipping sauce:
1. Combine ketchup, yogurt, mustard, jalapeno, T-Coons, and honey.
2. Stir to combine completely—I used my puree mixer.
3. Store in the fridge to keep cool until ready to serve.
4. Add extra T-Coons if needed. If you want it spicier add cayenne pepper. Salt and pepper to your taste.
