Crustless Meat Spinach Quiche

A great meal for family and friends. Full of great healthy ingredients.

Ingredients

1 pound Grass-Fed or Omega-3 breakfast sausage of any kind
1 Tbsp. macadamia nut oil
1 small sweet onion
¼ cup sliced mushrooms
2 cloves minced garlic
10 ounces chopped frozen spinach, thawed and drained
6 ounces crumbled Grass-Fed feta cheese
8 ounces Grass-Fed shredded cheddar cheese
6 large eggs
½ cup grass fed milk
¼ tsp pepper and salt

Optional: one bell pepper any color chopped

Preparation

1. Preheat oven to 350° F and lightly grease 8" by 8" casserole dish.
2. Cook breakfast meat and make sure meat is chopped up into small pieces and drain any fat and set meat aside in separate dish.
3. Heat oil in the same large skillet over medium high heat. Add onion and mushrooms and saute until softened for five to seven minutes.
4. Optional: add chopped bell pepper with onions and mushrooms.
5. Add garlic and cook for minute. Turn off heat and stir in drained spinach and both cheeses.
6. Spoon onion/mushroom mixture and meat into the 8" by 8" casserole dish
7. In mixing bowl whisk together eggs, milk, and salt and pepper.
8. Pour egg mixture over onions, mushroom, and meat mixture.
9. Bake for 40 to 45 minutes, until eggs are set. Let cool for 10 minutes before slicing and serving.
