Sheet Pan Flank Steak Fajitas


Here’s an easy fajita meal in one pan wrapped up in lettuce. It will be a hit for you and your family.

2 bell peppers (red, yellow, green or orange) sliced half-moon slices
1 medium onion sliced half-moon slices
1 Tbsp. macadamia nut oil
1½ tsp salt divided
1 tsp chili powder divided
¾ tsp garlic powder
¾ tsp black pepper divided
½ tsp ground cumin divided
1 (1½ pound) grass-fed flank steak
2 medium limes
Green long leaf lettuce
Avocado slices
Greek yogurt
Salsa

Pre heat oven to 450 degrees. Line pan with a sheet of foil.

In large mixing bowl combine: bell peppers, onions, two tsp oil, ¾ tsp salt, ½ tsp chili powder, garlic powder, ¼ tsp pepper, and ¼ tsp cumin. Mix together and pour onto the baking sheet.

Slice the flank steak against the grain into thin slices. Season with one tsp oil, remaining salt, chili powder, cumin and pepper. Rub seasoning into the slices. Put slices onto the baking sheet with onions and bell peppers.

Bake in preheated oven for 12 to 14 minutes.

Serve with lime wedge, avocado, salsa, and Greek yogurt on a long leaf lettuce. Enjoy!
