Breakfast Calzone

Wow, this is an incredible breakfast that your family will enjoy. Leftovers can be frozen for later.

Ingredients

12 biscuits (see recipe below)
12 eggs
1 Tbsp. grass-fed milk
1 pound pork/beef/buffalo breakfast sausage, diced ham, diced bacon
1 cup grass-fed shredded cheese your choice
Optional:
½ cup to 1 cup frozen spinach thawed
½ cup chopped sauteed onions
½ cup mushrooms

Preparation

1. Preheat oven to 350° F., grease one or two cookie sheets. I used two.
2. Whisk eggs and add the milk. Cook in greased pan till they are turned into soft scrambled eggs
3. For the calzone: roll out dough into five to six inch diameter circles about ⅛-inch thick.
4. Cook the meat until it’s done and broken down into small pieces.
5. On each dough circle spoon equal amounts of meat and eggs and sprinkle the top with cheese on half. Remember to add salt and pepper if desired at this point.
6. Fold the other part of the dough circle over and press and seal with fingers or afork.
7. Place on greased cookie sheet or parchment paper covered cookie sheet.
8. Cook for 15 minutes

Freezing: Can be frozen for three to four months in an air tight container. Use parchment paper to keep calzones from sticking to each other.

Ingredients

Almond flour biscuits (makes 12)
2½ cups almond flour
½ tsp baking soda
2 tsp baking powder
¼ tsp salt
3 Tbsp. unsalted grass fed butter chopped at room temperature
2 large eggs room temperature
¼ cup grass-fed milk, almond milk, or coconut milk
Optional: ¼ cup grass-fed shredded American cheese

Preparation

1. In large mixing bowl mix together all dry ingredients except the cheese.
2. Add chopped butter and using fork blend into flour. Add milk, eggs, and shredded cheese and combine until it is just combined.
3. Form into 12 five- to six-inch circles ⅛ inch thick.
