Shepherd's Pie a famous hearty meat casserole

A healthy remake for a famous hearty meat casserole.

Ingredients

Meat mixture:
1 pound of Grass-Fed or Omega-3 ground meat
    (beef, pork, lamb, goat, buffalo, chicken, or turkey)
1 Tbsp. macadamia nut oil
1 small onion diced
2 garlic cloves (medium to large) minced
1 small zucchini diced
Seasoning salt and pepper to taste
½ Tbsp. T-Coons The Stuff
1 cup diced tomatoes
Optional add 1 cup chopped fresh spinach

1 small head cauliflower cut into florets steamed till soft then mashed
1 Tbsp. Kerrygold butter
½ cup shredded Grass-Fed cheese
Seasoning salt and pepper to taste
½ to 1 Tbsp. garlic powder (your preference)
½ Tbsp. T-Coons The Stuff

On top of casserole
¼ cup Parmesan cheese
Optional ¼ cup of shredded Grass-Fed Swiss, cheddar, or pepper jack cheese

Cooking

Beef mixture:
1. Heat oil up and add onions and garlic on medium heat until onions are translucent.
2. Add ground meat and cook until no more pink.
3. Add zucchini and onions and stir to combine. Reduce heat to simmer and cover for 10 minutes.
4. Add spinach in last five minutes of the simmer time.
5. Drain all extra liquid from mixture before you put it in the casserole dish.

Cauliflower mashed:
1. Steam cauliflower florets until soft about 15 minutes.
2. Strain any water off the cauliflower and puree the cauliflower (can use a mixer).
3. Add butter, cheese, and seasonings.

Assembly:
1. Pour meat mixture into pan then mashed cauliflower on top.
2. Sprinkle shredded cheese and/or Parmesan cheese on top.

Bake at 350 degrees for 20 to 25 minutes. Broil on high for about five minutes to brown the top.

Serve with your favorite salad.

Options: you can add any vegetables you want to this casserole.
