"This makes chicken a real treat!"

Ingredients:

1 one-pound package Omega-3 boneless chicken breasts

1/4 c. macadamia nuts

2 Tbs. ground flax seed

1 Christopher or Omega-3 egg

1/4 c. tomato basil cheese, crumbled

Onion salt to taste

Coconut spray oil or other oil to keep chicken from sticking on cookie sheet or baking dish

Instructions:

Place nuts and ground flax seed in blender or food processor and process until the nuts are very small. 

In a small cup, whisk the egg so that the yolk and white is blended together.

Place each chicken breast on a cutting board covered with plastic wrap then place another piece of plastic over each breast.  Pound each breast with a meat hammer until it is flat. 

Sprinkle each breast with onion salt, crumble cheese in the middle, and roll the chicken breast so that it folds completely around the cheese.  Dip each chicken roll into the beaten egg then roll it the nut/flax mixture until it is completely coated.  Arrange on a cookie sheet or baking dish that has been sprayed with coconut oil or another non-stick oil or butter.  Bake uncovered at 350°F for 30-45 minutes or until a meat thermometer reaches 180°F.  Careful not to overcook or the chicken will become dry.  Let rest about 5 minutes and enjoy with a salad or healthy vegetable dish.
