Ground Beef and Cheese Cauliflower Rice Casserole

A great twist to beef casserole. Everyone enjoyed and wanted more.

Ingredients

1 pound Grass-Fed Ground Beef 90/10
1 Tbsp. macadamia nut oil
1 small onion diced
3 cloves minced
1 tsp Italian seasoning
½ tsp paprika
1 cup chopped spinach
12 ounces frozen cauliflower rice, cooked according to their directions
1 cup Greek yogurt no sugar
1 Tbsp. butter
½ Tbsp. dried basil
Salt and pepper to taste
8 ounces LVC Grass-Fed shredded cheese your choice

Optional: One cup cooked chopped broccoli and one cooked jalapeno chopped fine, one cup mushrooms cut in half.

Preparation

1. Preheat oven 375° F
2. Heat oil in large skillet over medium high heat. Add onions and cook for two minutes. Stir in garlic cook for one minute.
3. Add ground beef, season with Italian seasoning, paprika, salt and pepper. Cook meat until it's completely done and break up meat into small pieces. Add optional items at this time.
4. Add spinach to meat and cook until spinach is wilted.
5. Remove from heat, drain liquid, and set aside.
6. In bowl combine cooked cauliflower rice, yogurt, butter, dried basil. Stir in ground beef mixture.
7. In 9" x 13" baking dish pour mixture into dish. Top with shredded cheese. If you added optional ingredients you might need a bigger dish.
8. Bake for 22 to 25 minutes or until bubbly and cheese is melted.
9. Remove from oven and let it sit for a few minutes before serving.

Serve with your favorite salad. Enjoy.
