Bacon, Beans, and Feta Cheese

A great dish for family and friends. Can easily be doubled for parties. Serve with your favorite meat and sides/salad.

Ingredients

10 slices Omega-3 Pork Bacon—cooked, crumbled, and divided in half
1 (16 ounce) package frozen cut green beans
1 tsp minced garlic
4 oz crumbled LVC Raw Milk Goat Feta Cheese, divided
½ tsp onion powder
⅛ tsp ground black pepper
2 Tbsp. water
1 red onion cut in moon shaped slices

Preparation

1. Place bacon in a large, deep skillet. Cook over medium high heat until evenly browned but only slightly crisp. Drain and save grease, leaving a small amount in the skillet for later use. Crumble bacon, reserving half for garnish, and set aside.

2. Cook frozen beans in large pot for three minutes in boiling water until thawed, but not fully cooked. Drain liquid, pat dry, and set aside.

3. Reheat skillet with residual bacon grease over medium-high heat. Cook onions untill soft. Stir in bacon and garlic until garlic is lightly golden.

4. In large oven pot—add onions, bacon, garlic, green beans, feta cheese, and season with onion powder and black pepper. Stir all ingredients together. Cook until most of the feta cheese has melted, about two minutes. Transfer to a serving dish, and garnish with remaining feta cheese and crumbled bacon. Serve hot. You can also serve this cold as a salad: just do not cook the onions.
