Crock Pot Italian Pork Chops with a Great Side Dish
This is an multi-step meal that tastes great and it has an incredible side dish.

Ingredients

4 boneless Omega-3 Pork Butterfly Chops about one pound
1 red onion cut into half moon slices
1 large sweet potato chopped into bite size pieces
Optional Side Dish Vegetables:
10 ounces baby carrots
10 ounces bell peppers cut into half moon slices
10 broccoli florets

Italian dressing:
1½ cups macadamia nut oil
½ cup red or white wine vinegar
2 tsp garlic powder
2 tsp dried oregano
2 tsp dried basil
1 tsp onion powder
1 tsp crushed red pepper
1¼ tsp salt
1 tsp pepper
1 tsp lemon juice

Preparation

1. Put all Italian dressing ingredients in a jar and shake well. Always shake before using.
2. Place all vegetables in a crock pot.
3. Place pork chops on top.
4. Pour 1½ to 2 cups of Italian dressing over chops and vegetables.
5. Cover and cook on low for six to eight hours or on high for three to four hours.

Mushroom Cauliflower Rice Skillet

Ingredients

1 Tbsp. macadamia nut oil
½ stick celery chopped fine
¼ cup red onion chopped fine or four scallions chopped
1½ cups mushrooms chopped
8 ounces cauliflower rice
¼ cup vegetable broth or Omega-3 Chicken Broth
Soy sauce to taste
1 cup spinach
Salt and pepper to taste
½ bell pepper (red, orange or yellow)

1. In large skillet add macadamia nut oil on medium heat and cook onions, celery and bell peppers till tender about five minutes.
2. Add garlic and cook for one minute.
3. Add mushrooms and cook till done.
4. Add cauliflower rice, broth, and soy sauce. Cook till soft but not mushy.
