Omega-3 Pork Chops with Mushroom Garlic Gravy/Sauce

This is a simple Omega-3 pork chop recipe that delighted my friends. The plates were “licked” clean and all guests left with a copy of the recipe.

Ingredients:
4 Omega-3 Pork Butterfly Chops or Pork Chops (the thinner pork chops cook faster)
½ tsp paprika
Salt and pepper to taste
¼ cup butter, divided
8 oz mushroom sliced. (Either fresh or canned)
4 cloves garlic, minced (if you really like garlic add one more clove)
1 tsp Dijon mustard
2 Tbsp. flour (thickener)
2 cups Grass-Fed Beef Broth

1. Season both sides of pork chops with paprika, salt and pepper.
2. Use large skillet over medium-high heat. Melt two tablespoons butter. Lightly sear pork chops until golden brown—about two to four minutes on each side depending on thickness of pork chops. Remove pork chops and set aside. Do not drain or throw out the butter that remains in the skillet.
3. Melt remaining butter in the skillet. Add mushrooms and cook till golden and moisture evaporates—about five minutes. Add garlic and mustard. Cook till garlic is fragrant—about one minute.
4. Add flour to the skillet. Stir to remove lumps. Slowly add beef broth, whisking until incorporated. Season with salt and pepper. Reduce heat to medium to simmer, stirring often until gravy thickens in about five minutes.
5. Return pork chops to skillet and heat them up for about one minute.

Serve with cauliflower rice or mashed cauliflower and your favorite vegetable and salad.
