Onion Smothered Butterfly Pork Chops

Smothered Pork Chops make a comforting, down-home southern meal, especially when served with bacon-wrapped sweet potato wedges.

Ingredients

2 medium yellow or white onions: peeled, cut in half and sliced into ⅛-inch wide, half-moon shapes
3 Tbsp. Kerrygold Grass-Fed Butter
1 Tbsp. Macadamia Nut Oil
1.25 cups Omega-3 Pork Broth
4 Omega-3 Butterfly Pork Chops about 1 to 1½ inches thick
½ tsp kosher salt
¼ tsp black pepper
½ tsp dried thyme
¼ tsp garlic powder
2½ Tbsp. flour (pork broth thickener)
4 slices Lykens Valley Creamery Raw Milk Meadowrella Cheese
4 slices Lykens Valley Creamery Raw Milk Swiss Cheese

Preparation

1. Preheat oven 400° F.
2. Melt butter and oil in large cast iron pan (oven safe skillet) over medium heat.
3. Add onions saute for four minutes until soft. Add four tablespoons of Omega-3 Pork Broth. Cook for 12 to 15 more minutes until onions are very tender and golden brown.
4. Season both sides of the butterfly pork chops with all of the seasonings.
5. Transfer onions to a bowl.
6. Leave drippings in the pan.
7. Reduce heat to medium, add more oil if needed to the skillet. Cook pork chops for three to four minutes per side, until golden brown. Transfer chops to a plate.
8. Return onions to skillet and sprinkle with the flour. Add remaining pork broth stock and stir until mixture comes to a boil. Season with salt and pepper.
9. Nestle pork chops into pan and spoon the onion and pork stock mix over the pork chops. Then top each chop with slices of both Meadowrella and Swiss cheese.
10. Place skillet in oven and cook for eight to ten minutes, until cheese is melted.

Optional: when onions are cooking you can add sliced mushrooms.

Serve with your favorite salad and bacon wrapped sweet potatoes.

Bacon Wrapped Sweet Potatoes

Ingredients

1 large sweet potato: peeled and cut into about eight, lengthwise wedges
8 to 10 slices of Omega-3 Pork Bacon
½ tsp red pepper flakes
1 tsp paprika
½ tsp black pepper
½ tsp T-Coons All Purpose Seasoning
1 Tbsp. Macadamia Nut Oil

Preparation

1. Preheat oven 400° F.
2. Line baking sheet with parchment paper.
3. Mix all seasonings and oil in a bowl.
4. Add sweet potatoes wedges and toss to coat.
5. Wrap each wedge with one slice of bacon.
6. Place wedges on baking sheet and bake for 30 to 35 minutes: until bacon crispy and potatoes are tender.
