Blackened Chicken

A great spicy chicken meal that the entire family will enjoy.

Ingredients

4 boneless Omega-3 skinless chicken breasts (breasts must be pounded to same thickness to cook evenly), chicken tenders, thighs, or drumsticks
2 Tbsp. paprika
1 Tbsp. t-coons
1 Tbsp. dried thyme
1 Tbsp. onion powder
1 Tbsp. garlic powder
1 tsp cayenne pepper
1 tsp kosher/sea salt salt
1 Tbsp. red pepper flakes (optional)
2 Tbsp. macadamia nut oil

Directions

1. Preheat oven to 450̊ F.
2. In a small bowl mix together all dry ingredients.
3. Wipe the entire chicken with the oil, then sprinkle with the seasoning mixture, pressing with your fingers to help the coating adhere. (Wash hands afterwards.)
4. Heat a well-seasoned, large cast iron skillet over high heat until smoking hot, about five minutes.
5. Add the chicken breasts to skillet. Cook 30 seconds on each side to blacken, then place the skillet in the oven to finish cooking, 10-12 minutes (cooking time varies on type of chicken part). The chicken is done when no longer pink in the center and when juices run clear when pierced with a fork.
6. Remove the chicken to a plate and rest for five minutes before slicing and serving.

This is spicy. Serve with ranch to cool down the spiciness.

Serve with your favorite vegetable and salad.
