Chicken Salad with Ranch and Avocado

A great healthy sandwich that all will enjoy. Serve with you favorite veggies and salad.

Ingredients

Chicken Salad
1 pound ground or shredded cooked Omega-3 Chicken
½ cup chopped pecans—optional
½ medium avocado sliced or diced
2½ Tbsp. homemade ranch dressing (see below)
1 to 2 Tbsp. minced dill to taste
¼ cup diced small celery
¼ cup diced small onions
3 Tbsp. diced kosher pickles diced small—optional
1 head of romaine lettuce

Preparation

Mix all ingredients in a bowl. Avocados can either be added in the mixture or put on top of the sandwich. Chill for 30 minutes and serve on top of romaine lettuce.

Ranch Dressing
⅓ cup Greek no sugar plain yogurt
¼ cup grass fed milk
3 Tbsp. dried parsley
1 Tbsp. dried dill weed
1 Tbsp. granulated garlic
1 Tbsp. granulated onion
2 tsp sea or kosher salt
1 tsp fine ground black pepper

Preparation

Put all dry ingredients into blender and pulse for five to seven minutes. Store in air tight container.

Ranch dressing: Add yogurt and milk to a bowl. Add three tablespoons of ranch dressing mix and blend together.

Ranch Dip: Two-Thirds cup of yogurt and three tablespoons of mix. If you want it smoother add grass fed milk.
