General Tso Chicken

I miss Chinese food so I made a healthy version of General Tso Chicken and it was great. Serve with cauliflower rice or your favorite veggie or salad. I made mine with mashed cauliflower.

Ingredients

1 pound Omega-3 Chicken Breasts cut up into bite size cubes
3 Tbsp. macadamia nut oil
¼ cup soy sauce (gluten free)
2 Tbsp. rice vinegar or apple cider vinegar with ½ Tbsp. honey
1 Tbsp. Sriracha
2 Tbsp. honey
1 Tbsp. crushed garlic
2 Tbsp. fresh ginger grated
½ tsp Chinese Five spice
1 tsp crushed red pepper
½ cup cornstarch or coconut flour
½ tsp salt and pepper
8 small dried red chilies
¼ cup scallions sliced

Preparation

1. Medium bowl whisk together: One tablespoon oil, soy sauce, Sriracha, vinegar, honey, garlic, ginger, Chinese Five spice and red pepper. And set aside.
2. Combine cornstarch/flour with salt and pepper in plastic bag and add chicken cubes and shake until all the chicken is covered.
3. In large skillet add the rest of oil and cook chicken on medium heat untill done (four to six minutes) stirring often to prevent burning and sticking.
4. Add chilies, then pour sauce over chicken and cook for two to three minutes.
5. Add scallions and cook for one minute. Serve with your favorite cauliflower rice or veggies.

— this dish is spicy. To calm it down remove some red pepper flakes and/or the dried red chilies.
