Jambalaya: Chicken, Shrimp, and Bratwurst

Wow! This is incredible. Everyone loved it and the cauliflower rice was a great choice for this meal.

Ingredients

2 boneless and skinless Omega-3 chicken breasts
1 pound Bratwurst cooked and sliced into bite-size pieces—the Bratwurst can be smoked or uncooked Grass-Fed Beef, Grass-Fed Buffalo, Grass-Fed Lamb, or Omega-3 Pork
½ pound large shrimp deveined and peeled or one pound small shrimp deveined and peeled
4 Tbsp. macadamia nut oil
Salt and pepper to taste
2 Tbsp. Cajun seasoning (divided)
1 (16 ounce) bag cauliflower rice (thawed) or one large head of cauliflower, grated
1 large onion finely chopped
2 stalks celery finely chopped
1 medium red bell pepper finely chopped
4 cloves garlic minced
1 Tbsp. paprika
1 can (15 ounces) diced tomatoes undrained
Tabasco to taste
¼ cup cilantro divided

Add also if you want:
½ cup chopped mushrooms
½ cup spinach chopped
½ cup okra sliced

Preparation

1. Preheat oven 375° F. Pound chicken to ½ inch thickness. Place on greased baking sheet. Drizzle one tablespoon oil on chicken. Season evenly with salt, pepper and two teaspoons cajun seasoning. Cook for 22 to 25 minutes.
2. Place cauliflower rice on a nonstick baking sheet. Drizzle with one tablespoon oil and season with salt, pepper and one teaspoon of the Cajun seasoning. Toss so evenly distributed. Roast for 10 minutes next to chicken.
3. Heat two tablespoons of oil in a large skillet or medium-sized pot over medium heat. Add onions, reduce heat and cook for four to five minutes. Add celery, okra, and bell pepper and cook for another seven to eight minutes until soft.
4. Add garlic, paprika, the rest of Cajun seasoning and the bratwurst and cook for two minutes on medium heat. Add tomatoes, shrimp, and half of the cilantro and cook, stirring often until shrimp is done.
5. Cut chicken into ½ inch pieces and add to pan with cauliflower rice and heat throughly. If you want the spinach and mushrooms add them now. Add more seasonings and add Tabasco to your taste.

Serve with the rest of cilantro or just add it all to the pot.
