Whole Omega-3 Chicken Crock Pot

An easy recipe in one pot, that you can make as spicy as you want. Serve with a green salad.

Ingredients

1 four-pound whole Omega-3 Chicken
2 large sweet potatoes
1 large onion cut into large pieces
1 pat of Kerrygold Butter
4 large garlic cloves
2 tsp paprika
1 tsp salt
1 tsp onion powder
1 tsp Italian seasoning
1 Tbsp. T-Coons
1 tsp garlic powder
¼ to ½ tsp cayenne pepper
¼ tsp pepper
1 Tbsp. Cilantro

Preparation

1. In a small bowl: combine paprika, salt, onion powder, Italian seasoning, garlic powder, cayenne, black pepper, and T-Coons seasoning.
2. Wipe sides of crock pot with butter.
3. Cut up the onions and put the pieces in the bottom of the crock pot.
4. Put garlic cloves inside the chicken cavity.
5. Rub the spice mixture on the entire chicken, in the cavity, and under the skin
6. Peeled or not peeled sweet potatoes, cut into bite size pieces. Place on top of onions. Sprinkle cilantro on top of potatoes and onions.
7. Place chicken on top of onions and sweet potatoes breast side down. You do not need to add liquid. If you do, add only at most a half cup of chicken broth or water.
8. Cover the slow cooker. The best way to keep heat inside, cover top of pot with aluminum foil and then put lid on top of foil.
9. Cook for four hours on high, or six hours on low, or until chicken is cooked through and tender.
10. Remove from crock pot and serve with your favorite green salad.
