Waldorf Salad

A great Christmas and/or Thanksgiving salad my family always enjoys at festive gatherings.

Ingredients

3 Granny Smith apples (green) chopped into bite-sized pieces (One red apple optional)
1 rib celery, sliced into small pieces
1 cup red or green seedless grapes, halved optional
½ cup raisins
⅓ cup pecans halved
⅓ cup Greek yogurt (home made mayonnaise)
1 to 2 Tbsp. agave nectar (for sweetness)
1 tsp apple cider vinegar
3 cups torn spinach or kale optional
ground black pepper, to taste

Preparations

1. In a large bowl toss the apples in lemon juice. Add celery, raisins, pecans, and your optional items.
2. In a separate bowl stir together the yogurt, agave, vinegar, and pepper. Taste and adjust to your liking with a little yogurt, agave, or more vinegar.
3. Coat apple mixture in desired amount of dressing. (You may not want to use it all.)
Refrigerate until ready to serve. Serve cold with your meal on romaine lettuce.

Optional: This salad can be topped off with grilled Omega-3 Chicken and different berries.
