Very often, I just throw a little of this and a bit of that together in the kitchen and a few days ago I threw together what turned out by all accounts to be the best beef stew I've ever made. So, I'm going to try to remember all the ingredients and estimate how much of each one to share this delicious stew with you. Don't worry too much about measuring ingredients--just throw in what you have on hand!
Ingredients:
1/2 beef chuck roast (leftover) and the natural juices it was cooked in. (I cooked this roast overnight with a bit of Byron's Butt Rub to season it. We ate half of it and I made tew out of the leftover.
"Supposedly this dish brings good luck in the new year! Generally Hoppin' John is served over rice but we just serve it up in small cups or bowls and enjoy without rice or any other grain."
Ingredients:
1 large pork hock (fresh or smoked--depending on the flavor desired)
1 Tbs. macadamia oil or olive oil
1 c, onion, chopped
1/2 c. celery, chopped
1/2 c. green pepper, chopped
1 Tbs. garlic, minced
1 lb. black-eyed peas, soaked overnight and rinsed
1 quart chicken stock (check ingredients carefully on commercial stock or use recipe .......)
1 bay leaf
1 tsp. dry thyme leaves

Ingredients:
2 lbs. Slanker ground beef
8 oz. cooked black beans
8 oz. cooked garbanzo beans
8 oz. cooked pinto beans
32 oz. crushed tomatoes
1 dried chipotle chile
6 Tbs. cumin powder
1 Tbs. garlic powder
1 fresh jalapeno
5 Tbs. Redmond sea salt
1 cup onion, chopped
1/2 cup cilantro, chopped
1/2 cup shredded raw Parmesan or Kerrygold cheddar cheese from grass-fed cow's milk
Instructions:
Brown ground beef in the bottom of a large stock pot until just slightly pink. Add crushed tomatoes, beans, cumin, chipotle, whole jalpeno, cumin, garlic powder and salt.

Ingredients:
1 lb. Slanker 100% grass-fed beef (or buffalo) chili meat or ground beef (or buffalo)
1 medium onion--diced
1 medium red bell pepper--diced
2 carrots--cubed (optional)
28 oz. can diced tomatoes
28 oz. can crushed tomatoes
6 oz. can tomato paste
1/4 tsp. Real Salt Kosher salt
3 Tbs. chili powder
Instructions:
In skillet over medium-low heat, lightly brown the ground beef. Don't completely cook the beef--just lightly brown it to release some fat for use in sauteing the vegetables. Remove beef to -quart pot.
