12 oz. mixed baby greens containing 50% baby spinach
8 oz. Feta cheese, crumbled
2 tomatoes, cut into small wedges
2 cucumbers, peeled and thinly sliced
1 small red onion, thinly sliced into rings
Salt and pepper to taste
Juice of 1 lemon
2 Tbs. extra-virgin olive oil
2 Tbs. flax oil
2 Tbs. Hawaii's Gold macadamia oil
In small bowl, whisk together the lemon juice and oils to create a lemon dressing. Season lightly with salt and pepper.
Place the spinach/greens mixture and the feta cheese into a large bowl. Pour lemon dressing over the greens/feta mixture and gently toss until well coated. Serve the mixture on individual plates with tomatoes, onion rings and cucumbers arranged around the mixture. Top with freshly ground pepper and drizzle more oil over the salad if desired.
Other optional delicious additions include Kalamata olives and smoked wild-caught salmon. Or use your imagination to add another tasty ingredient!
