One Kale of a Burger!

This was a winner and one way we plan to enjoy "gourmet" burgers in the future!

Grilled Kale Burgers 3

              Grilled Kale Burgers

Ingredients:

1 pound 78% lean ground beef

1 c. fresh kale, chopped into small pieces

1/3 c. feta cheese, crumbled

1 tsp. TCoons "The Stuff!"

Instructions:

Naked Steak

Grass-fed steaks taste delicious without any marinade or spices added before or even after they are grilled.

Ingredients:

Boneless beef sirloin steak, thawed to room temperature

Instructions:

Texas Gold Nuggets

Everything in Texas is big and these "gold nuggets" are no exception! Consider doubling the recipe so you'll have enough for hearty appetites.

Ingredients:

1 lb. 78% lean grass-fed ground beef

4 Christopher eggs, hard-boiled and peeled

1 tsp. real sea salt

1 clove garlic, minced

1/2 tsp. black pepper

scant 1/8 tsp. ground cinnamon

scant 1/8 tsp. ground cloves

1 1/2 tsp. dried chives

Cuban Omega-3 Meat Balls

This recipe makes between 35-45 small meatballs. They make great leftovers, even cold!

Normally we don't eat raisins because their glycemic load is so high. But, to be more authentic, we indulged and used a scant amount. The olives are high in Omega-6 and low in Omega-3 so we added the finely ground chia seeds and flax seeds to offset the olives and make a more nutritious meal. Enjoy!

Ingredients:

Summer Sausage & Cheese Bites

"This quick and tasty appetizer is perfect for parties.  Serve with an array of fresh veggies such as carrot sticks, radishes or green onions for a healthy alternative to the usual party fare". 

Ingredients:

1 lb. Slanker summer sausage, cut into 1/4" rounds then cut each round into 4 pieces (cut each round slice in half two times)

1/2 lb. Habanero cheese, sliced thinly and cut into small pieces to fit on top of the summer sausage pieces

Instructions:

Beef or Pork Bacon Frittata

"This makes a great breakfast dish for company or for a brunch."

Ingredients:

8 Christopher or Omega-3 eggs, beaten

Kosher sea salt

1 Tbs. Hawaii's Gold Macadamia Oil

Freshly ground pepper to taste

1 large onion, diced

1 small red pepper, diced (optional)

1 lb. beef or pork bacon, cooked and crumbled

1 c. SwissLand mozzarella grass-fed cheese, diced

2 Tbs. basil leaves, chopped

1 Tbs. Capers (optional)
