Open-Face Halibut San-wich

Ingredients:

1/3 c. Hawaii's Gold macadamia oil

1/3 c. extra virgin olive oil

1 clove garlic, crushed

1 tsp. fresh thyme chopped (or 1/4 tsp. dried thyme)

8 ripe olives, sliced

Juice from one fresh lemon

1 small eggplant, cut into bite-sized pieces

1 large zucchini squash, thickly sliced

1 small fennel bulb, cut into bite-sized pieces

1 small red bell pepper, seeded and cut into small pieces

1 small yellow bell pepper, seeded and cut into small pieces

1 small onion, peeled and cut into thin slices

4 oz. feta cheese

1 1/2 lbs. halibut steak, cut into 1/4" slices

2 tsp. olive or macadamia oil

Salt and pepper to taste

Instructions:

In mixing bowl, combine oils, garlic, thyme, lemon juice and salt/pepper to taste; beat well.  Add the vegetables and toss to coat with seasoned oil mixture.  Cover and let stand for at least one hour.  Spread the mixture on a baking sheet.  Cook under broiler set at 400°F for 15 minutes, turning frequently until vegetables are tender.  Cover and keep warm.

Season halibut slices with salt and pepper.  Saute in macadamia or olive oil for 30 seconds on each side.  Transfer halibut to baking sheet.  Top with slices of feta cheese and cover with vegetables.  Broil until cheese is bubbly. 

Garnish with olives (optional).
