Grass-fed lamb arm chops are cut from the shank side of the shoulder and have a circular bone on one side with a good chunk of fat at the opposite end, adding for a great deal of flavor. Though arm chops are often broiled or grilled, braising is the ideal cooking method making this tougher cut much more tender.
