
This flavorful boneless roast, from the grass-fed chuck primal, can be prepared as a small pot roast. Properly prepared for maximum tenderness (roasted to an internal temperature of 120 degrees) it will be well received if sliced thin when served. Or it can easily be cut up into steaks.
