The most tender roast in the round. It's a smaller boneless roast with shorter cooking times. Very lean. Properly prepared (roasted to an internal temperature of 135 degrees) this roast is the classic red and juicy roast beef that is sliced thin when served. We suggest you purchase beef fat or suet to slice thin and cover the roast while it is cooking to improve flavor and enhance nutrition. U.S. raised grass-fed beef.
