Buffalo brisket flat half boneless comes from the brisket (breast) section and is cut from the rear portion of lean meat and the fat closest to the plate layers. The breast and rib bones are removed. This brisket is usually prepared by cooking in a crock pot, smoked long, low, and slow, or cured in salt brine to make corned buffalo brisket. It has a rich, buffalo flavor. Because it is from grass-fed buffalo, its richly flavored fat is very good for you as it usually has more Omega-3 fatty acids than Omega-6 fatty acids. Palatability is improved when the brisket is sliced across the grain. U.S. raised grass-fed buffalo.
