Beef or Pork Bacon Frittata

"This makes a great breakfast dish for company or for a brunch."

Ingredients:

8 Christopher or Omega-3 eggs, beaten

Kosher sea salt

1 Tbs. Hawaii's Gold Macadamia Oil

Freshly ground pepper to taste

1 large onion, diced

1 small red pepper, diced (optional)

1 lb. beef or pork bacon, cooked and crumbled

1 c. SwissLand mozzarella grass-fed cheese, diced

2 Tbs. basil leaves, chopped

1 Tbs. Capers (optional)

Instructions:

Preheat oven to 350°F.  In large mixing bowl, add all ingredients to the beaten eggs.  Warm 1 Tbs. Hawaii's Gold macadamia oil over medium heat in a 10" ovenproof nonstick skillet (or more oil in a cast iron skillet).  Add egg mixture.  As edges cook, pull them up to allow uncooked egg to run underneath.  Cook 1-2 minutes or until edges are set again.  Bake in 350°F oven about 15 minutes.  Do not overcook.  Cool for five minutes in pan then invert onto serving plate.  Serve warm or at room temperature.
