Mashed Cauliflower

"This is a great substitute for mashed potatoes. It's so delicious, maybe we should say that mashed potatoes would be a good substitute for mashed cauliflower!"
Ingredients:
1 head of cauliflower, cut into chunks
3 Tbs. grass-fed butter
1/4 c. plain Greek yogurt
1/2 tsp. garlic salt
1/4 c. grass-fed white cheddar cheese, grated (optional)
Instructions:
Steam cauliflower until tender. Transfer cooked cauliflower to mixer bowl, add butter, yogurt, and salt. Beat on low speed until chunks are smooth and butter is melted. If the mashed cauliflower is too thick, add a bit of water that the cauliflower was steamed in until it is the consistency desired. Top with grated cheese and serve hot.
