Slow-Cooked Beef Tongue Bowls

Beef tongue becomes tender and mild after slow cooking. Slice or crisp it after peeling, then serve over greens, cauliflower rice, or tortillas with fresh toppings.

Ingredients

  • 1 beef tongue
  • 1 onion, quartered
  • 4 garlic cloves
  • 2 bay leaves
  • 1 tsp sea salt
  • 1 tsp black peppercorns
  • Water or beef broth to cover
  • Avocado, greens, salsa, cilantro, and lime for serving

Directions

  1. Rinse the tongue and place it in a slow cooker with onion, garlic, bay leaves, salt, pepper, and enough liquid to cover.
  2. Cook on low 8 to 10 hours, until very tender.
  3. Peel while warm, then slice or chop.
  4. Brown the pieces in a hot skillet if desired.
  5. Serve in bowls with greens, avocado, salsa, cilantro, and lime.
