The most tender buffalo roast in the round. It is very lean and a smaller boneless roast with shorter cooking times. Properly prepared (roasted to an internal temperature of 135 degrees) this roast is the classic red and juicy roast buffalo. Use buffalo fat or thinly-sliced suet (which may be purchased from our store) to cover the roast while it is cooking to improve flavor and even nutrition. Recommend to serve in thin slices. U.S. raised grass-fed buffalo.
