Baby backs come from the sixth to twelfth ribs and are sold in 5- to 7-rib slabs. They have some meat and the long rib bones are an adventure to eat.
Slow and low cook the whole slab, then cut into individual ribs before serving. Serving size is usually from one half to one pound per person. U.S. raised grass-fed beef.
