These larger round or loaf-shaped buffalo cuts require careful preparation. Properly prepared (roasted to an internal temperature of 135 degrees) it will be well received if sliced thin when served. If overcooked they can be coarse, dry, and stringy. Use buffalo fat or thinly-sliced suet (which may be purchased from our store) to cover the roast while it is cooking to improve flavor and even nutrition. U.S. raised grass-fed buffalo.
