Column #48
Many people recognize that chronic diseases are diet related, but most believe toxins or contaminants are mainly to blame. They also think any food, even candy, safely provides at least something for growth, energy, or maintenance. These beliefs are dead wrong because food chemistry--nutrition--trumps everything.
Every food choice differs chemically. Yet a healthy diet consists of only the low glycemic foods that are nutrient dense and diverse with a 1:1 balance of Omega-6 to Omega-3 fatty acids. Unfortunately, most consumers choose nutritionally deficient foods such as grains, fruit, and nuts.
Bodies can’t make essential nutrients which only come from the food consumed. If a diet lacks them, over time deficiencies cause chronic diseases (body failures). Also any persistent nutrient deficiency beyond essential nutrients will also cause chronic diseases. Nutritional deficiencies almost always do more damage to health than contaminants found in food.
In the 1950s and 1960s chemists measured parts per thousands and sometimes parts per million (PPM). In the 1980s parts per billion became common. Today we measure parts per trillion and even parts per quadrillion. These sensitive methods for detecting contaminants in food are meaningless. Here’s why.
To grasp the magnitude of tiny, 1% of a million is 10,000. Most EPA limits on pesticides are way below 50 PPM, or less than 0.00005% of a measure of food. EPA limits for glyphosate in Pine Nuts is 1 PPM or 0.000001%.
Let’s recognize that plants produce natural pesticides (which man has been ingesting for all time) that are 100 times greater than EPA limits for similar organic and conventional pesticides. Also organic producers use “approved” pesticides to grow unblemished food. If targeted, these natural pesticides are easily detected. With this background let’s compare 0.000001% glyphosate with the scary food chemistry of Pine Nuts.
Pine Nuts are 13% carbohydrates, 14% protein, 33.6% Omega-6 fatty acids, 0.1% Omega-3 fatty acids, and 39% other fats, minerals, vitamins, and various nutrients. This breakdown is identical for “organic” and conventionally grown Pine Nuts. It reveals a massive imbalance of essential fatty acids which is the measure for the Omega-3 deficiency that damages the nervous system, causes autoimmune diseases, and hinders brain function. A diet consisting of 13% carbohydrates, 14% protein, 33.6% Omega-6 fatty acids, 0.1% Omega-3 fatty acids will destroy one’s health.
Scaremongers promote their agendas, foods, and supplements with phony rhetoric. They won’t explain that caffeine, a natural pesticide found in coffee and soft drinks, is ten times more toxic than glyphosate. Nor will they warn you that 90% Dark Chocolate is 0.0018% caffeine, which is 36 times greater than the high-side EPA 0.00005% limit of glyphosate in food. Therefore the caffeine in one ounce of dark chocolate is 3,600 times more toxic than one ounce of food with a trace of glyphosate!
Organic is nice, but grown organically doesn’t solve nutritional deficiencies or prevent chronic diseases. To prevent or confront a chronic disease, food consumed must be based on nutrition. The food tables in The Real Diet of Man show clearly which foods are best for eliminating nutrient deficiencies.
To your health.
