Beef and Chicken Fajitas

A great easy Mexican recipe that the entire family will enjoy.

Ingredients:

1 lbs. Grass-Fed Flank Steak or Skirt Steak or Stir Fry Strips, Chicken Breasts cut into strips
1 to 2 white onions thinly sliced
3 bell peppers thinly sliced (red, yellow and green)
1 Tbsp. Macadamia nut oil

Marinade:
⅓ c lime juice from three limes
¼ c Macadamia nut oil
4 garlic cloves minced
1 tsp ground cumin
1 tsp Redmond Kosher Salt
½ tsp chili powder
½ tsp freshly ground black pepper
pinch cayenne pepper

Sides:
Guacamole
Salsa
Sour cream
Coconut flour tortilla shells

Directions:

1. Add all of the marinade ingredients to a bowl and mix together. Add the steak and chicken, toss to combine, and marinate for two to four hours.
2. Heat a large skillet over medium-high heat. Add the steak/chicken and cook for three to four minutes on each side. Remove the steak to a cutting board and let the steak rest for several minutes.
3. While the steak is resting, heat the oil in the same skillet on medium-high heat. Add the onion and bell pepper slices and saute for four to five minutes, stirring frequently until soft.
4. When the onion and bell peppers are just about done, slice the steak/chicken into long, diagonal strips.
6. Serve immediately with coconut flour tortillas and your favorite toppings, such as sour cream, salsa, and guacamole.
