Corn Beef and Cabbage

This is a comfort food meal that all will enjoy on Saint Patty's Day or any family/friend gathering. I surely enjoyed this meal, especially since it was grass-fed meat.

Ingredients:

1 Grass-Fed Corned Beef Brisket three to four pounds
1 large white onion
4 to 5 medium garlic cloves
4 to 5 bay leaves
2½ - 3 cups water just enough to cover the meat
2 large sweet potatoes cleaned and quartered
2 large carrots peeled and cut into half-inch lengths
1 small head of cabbage cut into wedges

Instructions:

1. Chop onion into large chunks and place in the bottom of a six-quart slow cooker. Top onions with corned beef.
2. Pour water into slow cooker until it just about covers the corned beef. Add garlic and bay
leaves.
3. Cook on low eight to nine hours.
4. After the initial three hours, add sweet potatoes and carrots to the slow cooker.
5. Two hours before serving, add cabbage wedges to the slow cooker.
6. Remove corned beef from slow cooker and let rest 15 minutes before slicing into thin slices. Serve with all sides.
