Stuffed Cheese Meatloaf

This is a perfect easy meal to serve a family of four or cut in half for two. The meal surprised my friends on the flavor and cheesy treat in the middle.

2 pounds grass-fed ground beef
1 large onion diced into small pieces
4 pieces of bread toasted to soak the excess juices (discard when served)
3 eggs large
1 tablespoon T-Coons The Stuff
1 tablespoon pepper
1/2 tablespoon seasoning salt
1 tablespoon paprika
1/4 cup ketchup
1/8 cup Worcestershire sauce
Parmesan cheese
4 slices of pepper jack cheese (if you want it cheesier add 3 slices per dish)
4 24-ounce CorningWare round dishes

1.  Mix together in large bowl all ingredients except Parmesan cheese and pepper jack cheese and bread. Divide into 4 balls.
2.  Spray each CorningWare bowl with coconut oil. Put one piece of toast in each bowl to collect the grease from meat.
3.  Divide each meat ball in half. Place half of each ball in each CorningWare dish.
4.  Place pepper jack in center of each dish.
5.  Place remaining meat on top of cheese and pack down to seal edges so cheese does not melt out.
6.  Sprinkle top with paprika and Parmesan cheese.
7.  Cook covered in oven at 450 degrees for 30 minutes, uncover and cook for 10 minutes. Rest for 5 minutes. Remove from CorningWare and serve on a plate.

Each dish serves one person.  Serve with your favorite vegetable and salad.
