Zucchini and Meat Lasagna

Are you ready for a great, healthy lasagna? Yes, no pasta. The taste is incredible because it tastes like real lasagna. Serve with your favorite salad.

Ingredients

Zucchini
8 medium-sized zucchini
Macadamia nut oil
2 tsp sea salt
1 tsp divided pepper
1 tsp garlic powder

Meat
1 Tbsp. macadamia nut oil
1 lbs Grass-Fed Ground Beef 90/10, or other ground meat such as pork, buffalo, lamb, goat, and even uncooked bratwurst with skin removed. If you want a thicker lasagna add an extra pound of meat (drain all fat).
1 Tbsp. minced garlic
1⅓ cup marinara sauce divided

Cheese
15 ounces ricotta. You can sub cottage cheese or Greek yogurt no sugar.
2 large eggs
8 ounces shredded mozzarella cheese
1 Tbsp. Italian seasoning
1 Tbsp. garlic powder

Topping
8 ounces mozzarella cheese
4 ounces shredded Parmesan cheese

Preparation

Zucchini
1. Slice zucchini into ⅛-inch thick slices.
2. Lightly salt zucchini and place on paper towels.
3. Let sit for one hour to allow moisture to be released.
4. Place zucchini on cookie sheet and sprinkle it with oil, ½ teaspoon salt, ½ teaspoon pepper, ½ teaspoon garlic powder and place in the middle of oven and broil each side for three minutes until golden and browned, not crisp or browned.
5. Remove from oven and place on paper towels to soak up any extra juice.

Meat
1. In large skillet add oil and brown the meat.
2. Add minced garlic, ½ teaspoon salt, ½ teaspoon pepper.
3. Drain fat and add one cup marinara sauce and remove from heat.

Cheese
1. In medium bowl: mix together ricotta or your substitute, eggs, Italian seasoning, garlic powder and mozzarella cheese.

To assemble lasagna

Casserole dish 9" x 13"
Spread ⅓ cup marinara on bottom of the dish
Put in one layer of zucchini. Then layer in the cheese mixture followed by the meat.
Repeat layers.
The top layer is zucchini, mozzarella cheese, and Parmesan cheese.

Preheat oven to 350 degrees F.

Bake uncovered for 30 minutes until cheese is bubbly and golden brown. To help with overflow in oven, put the casserole dish on a cookie sheet. Remove from oven and let stand for 10 minutes.
