Crock Pot Beef Stir Fry

A healthy stir fry meal in one pot that the entire family will enjoy. You can make it with just beef or chicken or even both.

Ingredients

2 pounds grass-fed beef stir fry strips or sliced Omega-3 chicken breasts
½ tsp sea salt
¼ tsp ground black pepper
2 medium white onions cut into moon shaped slices
½ cup soy sauce recipe (see below)
1 Tbsp. macadamia nut oil
2 cloves garlic minced
2 tsp ginger grated
1 cup broccoli florets
1 cup snow peas
½ cup shredded carrots
1 can chopped water chestnuts
1 cup sliced mushrooms
4 cups cauliflower rice

Soy Sauce Recipe
1½ cups beef bone broth
2 tsp apple cider vinegar
2 tsp agave nectar or sugar free maple syrup
⅛ tsp ginger powder
1/16 tsp onion powder
1/16 tsp salt

Preparation

For Soy Sauce
1. Add all ingredients to saucepan except for salt.
2. Simmer on medium heat for 15 minutes. The liquid will reduce by a third.
3. Season with salt.
4. Place in a sealed container in the fridge for up to one week. Shake well before using. It may thicken in the fridge. Before using bring sauce to room temperature

For Crock Pot Beef Stir Fry
1. Season beef stir fry strips with salt and pepper. Place in the crock pot. Layer onions on top.
2. Whisk together soy sauce, oil, garlic, and ginger. Pour over the meat and onions.
3. Cook covered for five hours on medium.
4. Add vegetables and stir and cook an additional 30 minutes until broccoli is soft.
5. Serve over cauliflower rice.
