A very great meal for the kids. Just the right amount of spice with sweetness.
2 Lbs Omega-3 chicken any part (thigh, breasts, drumsticks, tenders)
2 Tbsp. macadamia nut oil
1 tsp smoked paprika
1 tsp kosher/sea salt
¾ tsp garlic powder
1 tsp chipotle powder
2 Tbsp. honey
1 tsp dry ground mustard or Dijon mustard
Honey Chipotle Sauce
⅔ c honey
¼ c water
¼ c ketchup no sugar, or tomato paste
1 Tbsp. white vinegar or apple cider vinegar
2 tsp ground Chipotle
½ tsp salt
1. Pat chicken dry.
2. In a small bowl mix all of the rub ingredients together. Coat the chicken with the rub and set aside.
3. In a medium-sized bowl mix together all the ingredients for the Honey Chipotle sauce. Set aside.
4. Heat oil in large skillet to high heat. Place chicken into the heated skillet and cook for four to five minutes until the chicken has a nice browned color on one side. Flip the chicken and turn the heat down to medium and continue cooking for seven to eight minutes, or until the chicken is cooked through.
5. Turn the heat down to low and drizzle the Honey Chipotle Sauce on top of the chicken. Allow the sauce to cook for five to six minutes until slightly thickened. Flip chicken half way inorder to coat chicken on both sides.
Serve with your favorite veggies or salad.
