Goat/Lamb Taco

A great way to make authentic, flavorful tacos. Use goat meat and everyone will enjoy.

Ingredients:

3-4 lbs Ground Grass-Fed Goat or GF Lamb
½ c white vinegar
1 c macadamia nut oil
5 cloves garlic, smashed and chopped
2 bay leaves
¼ tsp crushed pepper flakes
1 Tbsp salt
2 tsp fresh black pepper
1 tsp ground cinnamon
1 Tbsp ground cumin
3 strips lemon peel
2 Tbsp honey
2 tsp ancho chile powder
1 (16-oz) can crushed tomatoes
½ to 1 onion diced

Instructions:

1. In a mixing bowl, whisk all ingredients, except the meat and onion.
2. Preheat oven to 350° F using the middle rack. Cook ground meat and onion in a hot sauté pan until done. Pour mixture from bowl over meat. Roast in oven for 45 minutes.
3. Remove meat from oven. Discard lemon slices and bay leaves.
4. At this point, meat can be refrigerated again, covered, for 24 hours. When ready to serve, turn meat to coat with sauce and place in a suitable heavy oven-safe dish, covered tightly with foil, and cook until bubbling, about 30 minutes.
5. Serve meat with warm almond/coconut tortillas or romaine lettuce, chopped onion, sprigs of cilantro, shaved radishes, tomatoes, avocado, sour cream, crumbled cheese, green onion, your favorite salsa, small white onion etc.
