Vibrant Lamb Chop Recipe

A vibrant tasty treat you and family will enjoy.

Ingredients:

4 Grass-Fed Lamb Chops Two lbs with bone-in (shoulder, loin, etc)
2 tsp chopped thyme
½ tsp chopped parsley
1 Tbsp. Dijon mustard
2 cloves garlic minced
3 Tbsp. olive oil
2 tsp fresh rosemary finely chopped
½ tsp salt
¼ tsp pepper

Directions:

1. Whisk together in a bowl the Dijon mustard, garlic, olive oil, rosemary, thyme, parsley, and salt and pepper.
2. Place lamb chops in a large zip-top bag or other airtight container. Coat lamb with Dijon mixture on both sides. Let marinate in the fridge for at least 30 minutes, but up to 24 hours.
3. Position an oven rack to the second highest position in the oven and line a broiler pan with aluminum foil.
4. Take lamb chops out of the bag and place onto prepared pan. Set oven to broil on high and place pan into the oven.
4. Broil lamb chops for four minutes, until brown, and then flip and cook for an additional two to three minutes depending on the doneness you like your meat. (Two minutes for medium rare, three for medium, and four for well done. Rare is best.)

Please keep an eye on the chops while cooking to make sure you do not over cook them. The thinner they are, the faster they cook.

Serve with your favorite salad and side.
