Artichoke, Spinach, Stuffed Bacon-Wrapped Chicken

How else can we improve Omega-3 chicken with spinach? Let’s add bacon and artichokes! That turned this meal into a great crunch creamy dish.

2 large Omega-3 chicken breasts pounded out to 1/8 inch thick
14 oz of artichoke hearts chopped up
1 lb of bacon
1 cup fresh chopped spinach
½ cup shredded cheese: American, pepper jack, Swiss—your choice
¼ Greek yogurt (no sugar)
Salt and pepper
1 clove garlic minced
½ small onion diced (red or white)

1. Preheat oven to 350° degrees or preheat air fryer to 350° degrees
2. 8" x 8" cooking casserole dish greased
3. Pound chicken down to 1/8 of an inch thickness
4. Mix together the rest of ingredients but not the bacon
5. Scoop the mixed ingredients onto the chicken and roll up
6. Wrap bacon around each chicken to form a bacon blanket
7. Place in preheated oven for 30 to 35 minutes or put in air fryer and cook for 30 minutes

Serve with sweet potatoes cut up into bite size pieces and one whole red onion sliced into half-moon shaped pieces. Pour on some macadamia nut oil and season with salt and pepper and T-Coons. Cook at 350° degrees for one hour in either the oven or an air fryer until sweet potatoes are soft.

Or, this can be served with your favorite salad. Enjoy!!
