Chicken Cordon Bleu

This is a great simple meal that can be confidently shared with family and friends.

Ingredients:

4 Omega-3 Chicken Boneless, Skinless Breasts
8 thin slices of Omega-3 Pork Deli Ham
Coconut oil, Macadamia Nut oil, or Olive oil spray
1 Tbsp. Greek sugar-free yogurt
2 Tbsp. Dijon mustard
½ tsp sea salt
½ tsp black pepper
1 cup almond flour or coconut flour
¼ cup Parmesan cheese
4 slices grass-fed Swiss cheese

Instructions:

1. Preheat oven to 425̊ F.
2. Line a baking dish with foil, put a wire rack on tray, and spray the rack with your favorite oil.
3. In a small bowl, mix the yogurt and the Dijon mustard.
4. Season the chicken breasts on both sides with salt and pepper. Brush them on all sides with the Dijon mixture. Dredge them in the almond meal and Parmesan cheese mixture and place them on the prepared wire rack. Spray their tops with oil.
5. Bake the chicken, uncovered for 20 to 30 minutes.
6. Top each chicken breast with two slices of ham (folded in two if necessary) and a slice of Grass-Fed Swiss cheese.
7. Return the chicken to the hot oven for two to three minutes, just until the cheese melts.
Allow to rest five minutes before serving. Serve with your favorite side or, in this case, it was spinach, onion, and Omega-3 Pork Bacon stir-fry.
