Omega-3 Chicken with Vodka (Tequila) Red Sauce

This is a great, fun and enjoyable recipe for the entire family.

Ingredients:

Chicken:
1 lbs. Omega-3 Chicken Tenders
½ c almond/coconut flour
1 Tbsp. garlic powder
2 Tbsp. macadamia nut oil

Sauce:
1 medium shallot, minced
3 Tbsp. grass-fed unsalted butter
2 clove garlic, minced
⅓ c vodka, substitute tequila
28 oz can tomato puree
¼ tsp red chili flakes
¾ to 1 c Greek yogurt
⅓ c shredded Parmesan cheese

Topping:
Shredded Parmesan cheese
Basil
Salt and pepper to taste
Garlic powder

Directions:

Chicken:
1. Mix in bowl: flour and seasonings.
2. Drench each chicken tender into flour mixture and shake off excess.
3. In medium sauce pan heat oil on medium high heat.
4. Cook chicken tenders till done, about five to six minutes on each side (depends on thickness).
5. Place chicken on paper towel and keep warm in oven on lowest temperature.

Sauce:
1. In a medium sauce pot, sauté the shallots in butter over medium heat until clear. (Use same pan as you used for chicken, do not rinse pan after cooking chicken).
2. Add the garlic and saute for one minute.
3. Add the vodka (tequila) and cook for one minute.
4. Add the tomato puree and chili flakes, bring to a boil and reduce to a simmer. Simmer for about 25 minutes.
5. Remove from heat and add yogurt and Parmesan cheese. Stir until combined.

Serving Directions:
Plate the spaghetti squash/spiraled zucchini, add sauce, and then add the chicken. Add the basil, Parmesan cheese, salt, pepper, and garlic powder to your liking.

Serve over spaghetti squash or spiraled zucchini.
