2 lbs. Slanker ground beef

8 oz. cooked black beans

8 oz. cooked garbanzo beans

8 oz. cooked pinto beans

32 oz. crushed tomatoes

1 dried chipotle chile

6 Tbs. cumin powder

1 Tbs. garlic powder

1 fresh jalapeno

5 Tbs. Redmond sea salt

1 cup onion, chopped

1/2 cup cilantro, chopped

1/2 cup shredded raw Parmesan or Kerrygold cheddar cheese from grass-fed cow's milk


Brown ground beef in the bottom of a large stock pot until just slightly pink.  Add crushed tomatoes, beans, cumin, chipotle, whole jalapeno, cumin, garlic powder and salt.  Cover and simmer on low heat or in slow cooker for 3 hours.  Serve with grated cilantro, raw onion and top with Parmesan cheese.
