Mashed Sweet Potato

A great twist for sweet potatoes that the entire family will enjoy.

Ingredients:

4 Omega-3 Pork Bacon crispy crumbled
3-5 Sweet potatoes peeled
½ White onion cubed
2 Bay leaves
3 Garlic cloves
1 Tbsp. salt
2 to 3 Tbsp. grass-fed butter melted
1 to 2 Tbsp. sugar free Greek yogurt (sour cream)
2 Tbsp. crushed pecans
Chives to garnish optional

Instructions:

1. Peel sweet potatoes cut into half-inch cubes, then place them in a large pot. Add halved onion, two bay leaves, three garlic cloves, and enough water to cover potatoes then place over medium/high heat.
2. When potatoes start to boil, add salt then reduce heat to med-low, partially cover and cook for 10-12 minutes. Potatoes are done when easily pierced with a fork. Remove from heat and discard onion, garlic, and bay leaves and drain the potatoes.
3. Mash potatoes until uniform in color then mash in melted butter. Finally, add two heaping tablespoons of yogurt (sour cream) and mash until smooth. You can use a hand mixer.
4. In a medium sauté pan, cook chopped bacon until golden brown then remove from heat. Sprinkle over the mashed potatoes. Then sprinkle with the pecan pieces. Garnish with chives and serve with your favorite grass-fed meat.
