Volcano Sweet Potatoes and Cheesy Green Beans

A great twist to twice baked sweet potato that the entire family will enjoy.

Ingredients:

4 sweet potatoes
8 strips Omega-3 Pork Bacon

Filling:
1 cup grass-fed cheddar cheese shredded
1 cup cream cheese
1 green onion diced

Dipping/Topping:
BBQ sauce sugar free
sour cream
Chives

Instructions:

1. Pre heat oven 350°F.
2. Scrub and wash the sweet potatoes. Poke a few holes into each sweet potato with a toothpick to create a vent.
3. Cook in microwave until soft.
4. Remove sweet potatoes from microwave and leave to cool for 5-10 minutes.
5. Slice the ends of the potatoes so they can stand. Use a small spoon to carve out each sweet potato's inside, carefully ensuring that the walls and bottom are still thick. And combine into filling.
6. In a medium-size bowl, mix the filling ingredients until combined thoroughly with the sweet potato’s insides.
7. Fill each sweet potato with the stuffing. Wrap each sweet potato with two strips of bacon, using toothpicks to hold them in place. Don’t worry if any edges are sticking out.
8. Put sweet potatoes back in oven. Cook for 15 minutes, until brown and bacon is crispy.
9. Brush a thin layer of BBQ sauce over sweet potatoes and bacon. Cover with more cheddar cheese and cook for a further three to five minutes.
10. Remove from oven.

Serve with BBQ sauce,  sour cream dipping sauce, and your favorite healthy meat.
